Though Hughes mostly avoids culinary avant-gardism, dishes like a cassoulet âtrioâ --- deconstructed and plated in sections of succulent duck leg confit falling off the bone, braised pork cheek and Farpoint Ranch sausage --- reflect his city upbringing.
