Snub the regular offerings and request their menu of "Shanghai specialties," faraway and well above the passe standards.
"There is absolutely no reason why Tang Pavilion is as bad as it is. Venture downtown and you'll find some of the best Chinese food outside of China, with fresh exotic ingredients prepared..."

You must ask for the Chinese menu (which has English translations) for other delicacies like crisp-fried baby eel.
